Wild Turkey Breast

Wild turkey is very lean and dries out quickly if cooked incorrectly, so keep that in mind.

1 turkey breast
1 small can chicken broth
1 small onion, diced medium
4 cloves of garlic (leave whole)
1 carrot peeled and cut into medium rounds
3 ribs  celery, diced medium
3 whole bay leaves
1 turkey oven bag, follow the directions on the box so the bag doesn’t burn

METHOD:

Preheat oven to 325 degrees. Wild turkey is very lean and dries out quickly if cooked incorrectly, so keep that in mind. Let your turkey breast sit on the counter for an hour or so, which will allow it to cook evenly – known as tempering. Gather the rest of your ingredients at this time. The breast needs to be cooked to 150 degrees internal temperature, cook it slow and low to keep it moist. Take each side of the turkey breast and season very generously all over with salt and pepper. Place the turkey in a large cooking pan, and on high heat with just enough cooking oil to cover the bottom take your time and brown
